HEALTHY PEANUT BUTTER CUPS
SO SO good!!!! I set two bowls side by side and make up the bottom and top layers at the same time. The ingredients are almost identical. I also ALWAYS double the recipe Bottom Layer (chocolate) 1/3 cup natural peanut butter 2 1/2 TB coconut oil 1 tsp vanilla extract 3 TB cocao powder 2 TB maple syrup Top Layer (peanut butter) 1/2 cup natural peanut butter 2 TB coconut oil 1 tsp vanilla extract 2 TB maple syrup Line mini muffin trays with parchment muffin liners. Drop one scoop of the chocolate in the bottom on each. Tap the tray to shake down the first layer. Then, drop the peanut butter scoop on top. Sprinkle a bit of Himalayan sea salt on top. Tap down. FLOURLESS PEANUT BUTTER COOKIES
Mix and set aside 1 tablespoon (5 g) ground flax 3 tablespoons (45 mL) water Mix in a separate bowl 1/2 cup (53 g) unsweetened shredded coconut 1/2 cup (52 g) gluten-free rolled oats 1/2 cup (68 g) packed brown sugar 1 teaspoon baking powder 1/2 teaspoon fine sea salt (reduce salt if using salted peanut butter) 1/4 cup (49 g) mini non-dairy chocolate chips** You can mix these ingredients into the flax mixture OR just throw it all in the mixer;) 1/2 cup (125 mL) natural smooth peanut butter (REAL peanut butter) 1 teaspoon (5 mL) pure vanilla extract 2 tablespoons (30 mL) pure maple syrup Bake 12-14 minutes @ 350°F (180°C), line a large baking sheet with parchment paper. I can hardly begin to describe how AMAZING these are!!! VEGAN BANANA ZUCCHINI OATMEAL COOKIES
* 1/2 cup almond flour
* 1/4 cup einkorn flour or whole wheat flour
* 1/2 cup old-fashioned rolled oats
* 1/2 cup steel cut oats
* 1/2 teaspoon baking soda
* 1/2 teaspoon cinnamon
* 1/4 teaspoon salt
* 1 cup mashed ripe banana (from about 2 medium bananas)
* 1 cup shredded zucchini, squeezed of excess moisture with a paper towel*
* 2 tablespoons pure maple syrup (can also use honey if not vegan)
* 1/4 cup melted and cooled coconut oil
* 1 teaspoon vanilla extract
* 1/4 cup chocolate chips, vegan if desired
* Optional: nuts or seeds
INSTRUCTIONS
1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
2. In a large bowl whisk together flour, oats, baking soda, cinnamon and salt. Set aside.
3. Before you mix your wet ingredients, make sure you have squeezed your shredded zucchini of excess moisture with a paper towel or cheesecloth. THIS IS IMPORTANT!
4. In a separate large bowl, mix together mashed banana, shredded zucchini, maple syrup, coconut oil and vanilla extract until well combined. Add wet ingredients to dry ingredients and mix until just combined. Fold in chocolate chips. The dough will seem wet and sticky, but that's okay -- don't worry!
5. Use 1/4 cup to measure out dough and drop on baking sheet, placing cookie dough 2 inches apart from one another. Slightly flatten with the palm of your hand. Bake for 13-16 minutes or until cookies are golden brown on the edges. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Makes 14 cookies.

MY SON SAYS THESE ARE THE BEST COOKIES HE'S EVER HAD!!! So, yes there's some coconut sugar in them... but I also adding in some other goodies! More than 1/3 cup, but less than 2/3 cup coconut sugar (top it up to 2/3 cup with chocolate protein powder 1/2 tsp baking soda 1 cup of Nut & Seed Butter 1-2 eggs 2 TBS honey Sprinkle of chocolate chips 350 degrees for 10 minutes, take them out when they are brown but soft and leave on the tray for 10 more |

PRIMAL FUDGE
I usually make chocolate in a crock pot...but this was EVEN easier!!!

Melt coconut oil (by putting jar in some warm water - - not using the microwave) ...blend all ingredients in food processor or blender. Pour in paper lined mini muffin tins about 1/2 inch full, chill 30 minutes!! Store these in the fridge as they will melt. Feel free to add nuts, and or a little peppermint schnapps, even a sprinkle of coarse sea salt on top. Really make these your own.

Might be the easiest recipe EVER!!!! Super simple to add in more healthy "stuff". We used chocolate chips instead of dipping in chocolate. Could easily add flax seed, crunched up nuts, even coat in coconut. Took me less than 3 minutes to prep and less than 3 minutes to scoff a bunch down!
